Heart healthy Lauki kofta curry (Pan fried bottle gourd dumplings in tomato gravy)❤️

For the Koftas

1 kg peeled and grated bottle gourd
100 gms Bengal gram flour
2 tsp chopped green chillies
1 tsp ginger garlic paste
50 g rolled oats
salt to taste
1 tsp chilli powder
1 tsp oil
2 tsp chopped coriander / cilantro
Olive oil to pan fry

For the gravy
3 tbsp oil
1 tsp ginger paste
2 tsp chopped garlic
1 cup chopped onions
2 cups chopped tomatoes
salt to taste
1 tsp chilli powder
1/2 tsp turmeric powder (haldi)
2 tsp coriander (dhania) powder
1 tsp cumin seeds (jeera) powder
1 tsp garam masala
1 tbsp chopped coriander

For the lauki koftas
Strain the liquid out of the grated bottle gourd and preserve it to add in the gravy.Combine all the ingredients in a bowl add oats to combine. Divide this mixture into 14 equal portions and roll each portion into patties. Coat with bread crumbs as needed.
Pan fry in olive oil and keep aside

For the gravy
Heat the oil in a deep non-stick pan and add the cumin seeds. When the seeds crackle, add the onions and sauté on a medium flame for a minute. Add the ginger paste, garlic paste, tomatoes, turmeric powder, coriander-cumin seeds powder and chilli powder and cook for 1 to 2 minutes, while stirring occasionally.
Add the reserved liquid of the bottle gourd and 1½ cups of water, mix well and bring to a boil, while stirring occasionally. Add the salt and cornflour-water mixture, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
Add the koftas, and garam masala, mix gently and cook on a medium flame for another 1 to 2 minutes.
Serve hot with parathas or brown rice.The koftas tend to crumble if you boil them too much in the gravy. So, it’s better to add them just before you’re ready to serve them.
